Whole Wheat Banana Pancakes

Ingredients

  • 1 1/2 cups white whole-wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup organic sugar
  • 1/2 tsp fine salt
  • 2 cups buttermilk
  • 2 large eggs
  • 1 tsp vanilla
  • 2 tbsp melted butter
  • 2 ripe bananas, sliced

Directions

  1. Whisk together flour, baking powder, baking soda, sugar and salt in a large bowl.
  2. In a separate bowl, whisk together buttermilk, eggs, vanilla and melted butter.
  3. Make a well in the center of the dry ingredients and gradually whisk in the buttermilk to make a batter with a few lumps.
  4. Preheat a cast-iron or nonstick griddle or skillet to medium-high heat and spray with nonstick spray.
  5. Add about 3/4 cup batter per pancake to the griddle/skillet, leaving about 3 inches between each one.
  6. Cook until the batter bubbles slightly and is cooked on the bottom.
  7. Add a few slices of banana to each pancake and flip with a flexible spatula.
  8. Continue cooking until cooked through.
  9. Serve warm with pure maple syrup and fresh bananas on top.
