Ginger-Applesauce Cake


  • 3/4 cup (1 1/2 sticks) butter, softened, divided
  • 1 pkg (2 layer size) spice cake mix
  • 3 eggs
  • 1 1/3 cups applesauce
  • 2/3 cups finely chopped crystallized ginger, divided
  • 1 pkg (8 oz) PHILADELPHIA Cream Cheese, softened
  • 1 tsp vanilla
  • 1 tsp ground ginger
  • 2 cups powdered sugar


  1. Heat oven to 350 degrees.
  2. Beat 1/2 cup butter, cake mix, eggs and applesauce with mixer 2 minutes or until well blended.
  3. Stir in 1/2 cup chopped ginger and pour into 13×9 inch baking dish sprayed with cooking spray.
  4. Bake 45-50 minutes or until toothpick inserted in center comes out clean.
  5. Cool completely.
  6. Beat cream cheese and remaining butter in large bowl with mixer until well blended.
  7. Add vanilla and ground ginger and mix well.
  8. Gradually beat in powdered sugar.
  9. Spread onto cake and garnish with remaining chopped ginger.
  10. Keep refrigerated.
