Upside-Down Sunshine Cake


  • 1 pkg (2 layer size) yellow cake mix
  • 1 pkg (3 oz) JELL-O Orange Flavor Gelatin
  • 1 can (20 oz) DOLE Pineapple slices, in juice, drained
  • 10 Maraschino cherries
  • 3/4 cup thawed COOL WHIP Whipped Topping


  1. Heat oven to 350 degrees.
  2. Prepare cake batter as directed on package.
  3. Spray 13×9 inch baking dish generously with cooking spray.
  4. Sprinkle dry gelatin mix onto bottom of dish and top with pineapple.
  5. Place cherry in center of each slice.
  6. Pour batter over fruit in dish.
  7. Bake 40 to 45 minutes or until toothpick inserted in center comes out clean.
  8. Cool 5 minutes and loosen cake from sides of dish.
  9. Invert onto platter and gently remove dish.
  10. Cool cake completely and serve topped with COOL WHIP.
