Citrus Grilled Salmon


  • 2 6-oz salmon filets
  • 1/2 cup orange juice
  • 1 tbsp lime juice
  • 2 tsp olive oil
  • 2 tsp dijon mustard
  • 1/2 tsp lime zest from 1 lime
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tsp fresh thyme leaves
  • 2 tsp chopped fresh chives
  • 6 cups mixed lettuces
  • 1 cup halved cherry tomatoes


  1. In a small bowl, whisk together orange juice, lime juice, oil, mustard, lime zest, salt and black pepper.
  2. Remove 3 tbsp of citrus mixture and brush all over salmon.
  3. Grill salmon to medium rare and add thyme and chives to reserved citrus mixture.
  4. Arrange lettuce on individual plates.
  5. Top lettuce with tomatoes and grilled fish.
  6. Spoon reserved citrus vinaigrette over top, squeeze juice from grilled lime and serve.
