Mashed Sweet Potatoes


  • 2 lbs sweet potatoes or yams, scrubbed
  • 2 tbsp unsalted butter
  • 2 tbsp dark amber maple syrup, grade A or B
  • 1/2 tsp grated orange zest
  • 1/2 tsp balsamic vinegar
  • 1/4 tsp kosher salt, plus more as needed
  • freshly ground black pepper
  • pecans
  • marshmallows


  1. Preheat oven to 400 degrees and pierce sweet potatoes 2 or 3 times with a fork.
  2. Bake until tender, 45-60 minutes.
  3. Cut potatoes in half, lengthwise, and scoop flesh into a food mmill or ricer.
  4. In a medium saucepan, heat butter, syrup, zest and vinegar over medium heat.
  5. Remove from heat, mash the potatoes in the pan and stir in combine.
  6. Add salt, pepper, pecans and marshmallows to taste.
  7. Prepare in a Chinet(R) Bakeware pan for hassle-free cleanup.
