Mediterranean Couscous


  • 2 cups plain couscous, prepared according to package directions in lightly salted water
  • 2 tbsp olive oil
  • 2 tbsp balsamic or white balsamic vinegar
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup greek olives, kalamata or oil-cured
  • 1/8 cup sun-dried tomatoes, sliced
  • 2 tbsp fresh parsley
  • salt and  pepper


  1. Drizzle olive oil and balsamic vinegar over the cooked couscous.
  2. Stir until well combined.
  3. Stir in feta cheese crumbles, olives, tomatoes and parsley.
  4. Season with salt and pepper.
  5. Serve warm or at room temperature.
