Quinoa Edamame Salad


  • 1 cup black quinoa (but really, any type will do)
  • 2 cups water
  • 1/2 cup rice wine vinegar
  • 6 tbsp grapeseed oil*
  • 2 tbsp flax oil*
  • 1/3 cup chopped fresh cilantro
  • 2 limes, juiced
  • 1 tbsp honey
  • 3/4 tsp salt, plus more to taste if desired
  • 2 cloves garlic, minced
  • 2 lbs frozen, shelled edamame (green soybeans)
  • 4 green onions, thinly sliced
  • 1/2 cup chopped peanuts (optional)
*You can substitute 1/2 cup light olive oil here (EVOO will have too strong a flavor)*


  1. Cook quinoa and whisk together the vinegar, oil, lime juice, honey, salt, cilantro and garlic.
  2. Allow to stand while you prepare the rest of the salad.
  3. Steam the quinoa in a steamer until the desired doneness is reached.
  4. Toss the beans with the green onions and the cooked quinoa.
  5. Toss with the dressing and then season to taste.
  6. Garnish with fresh peanuts and enjoy!
