Spring Mix Salad with Dijon Herb Vinaigrette

Ingredients – Salad

  • 8 oz baby spring mix
  • 2 medium carrots, diced
  • 1 cup cherry tomatoes, halved
  • 1 English cucumber, diced
  • 4 oz crumbled feta cheese
  • 1 pear, cored and diced
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp pepper

Ingredients – Dressing

  • 1/2 shallot, finely chopped
  • 1 small clove garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 2 tbsp EVOO
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp fresh rosemary (optional)
  • 1 tsp fresh parsley (optional)

Directions

  1. Toss diced pear in honey, olive oil, thyme, salt and pepper.
  2. Lay flat in shallow baking dish and roast at 400 degrees for 5 to 8 minutes or until soft and carmelized.
  3. Remove from oven and cool down immediately.
  4. Mix cooled pear with rest of ingredients and toss with dressing.

*Makes 8 side salad servings*
