Twice Baked Sweet Potatoes


  • 2 large sweet potatoes
  • 2 oz PHILADELPHIA Neufchatel Cheese, cubed
  • 2 tablespoons fat-free milk
  • 1 tablespoon brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup chopped PLANTERS Pecans


  1. Cut potatoes lengthwise in half and place, cut sides down, in foil-lined 15X10X1 inch pan.
  2. Bake at 425 degrees F for 30-35 minutes or until tender.
  3. Scoop out centers of potatoes into bowl, leaving 1/4-inch-thick shells.
  4. Add Neufchatel, milk, sugar, and cinnamon to potatoes.
  5. Mash until blended.
  6. Fill shells with potato mixture and top with nuts.
  7. Bake 8 minutes or until potatoes are heated through and nuts are toasted.
