Chicken Tortilla Soup


  • 1 lb chicken breast or thighs
  • couple of limes
  • splash of red wine vinegar
  • 2-3 cloves garlic, pressed or coarsely chopped
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp Kosher salt
  • 1/2 tsp black pepper
  • 1 large onion, chopped
  • 6 cloves garlic, minced or pressed
  • 4 cans chicken broth
  • 1 15-oz can chopped or diced tomatoes
  • 2 jalapeno peppers (or try serrano peppers; they’re milder)
  • 1/4 cup fresh lime juice (3-4 limes)
  • 1 tsp salt
  • 1/4 tsp black pepper
  • Store-bought tortilla chips
  • sliced avocado/guacamole
  • grated or crumbled cotija cheese
  • 1/4 cup cilantro

Directions – to prepare chicken

  1. Juice the limes and combine with a couple of splashes of red wine vinegar.
  2. Add garlic and pour over chicken.
  3. Turn occasionally as needed.
  4. Marinate for at least 4 hours, but no longer than 8.
  5. Heat a grill (outdoor or indoor pan…or broiler in oven).
  6. Combine salt, chili powder, cumin and black pepper in a small bowl.
  7. Remove chicken from marinade and rub the spices all over the chicken.
  8. Grill about 7 minutes per side.
  9. Remove from heat and allow to stand a few minutes so it doesn’t lose juices.

Directions – soup

  1. In a large stockpot, heat some olive oil over medium heat.
  2. Add chopped onion and saute 3-4 minutes.
  3. Add garlic and minced jalapeno and cook a few minutes more until pepper is softened and garlic is fragrant.
  4. Add chicken broth and tomatoes and bring to a boil.
  5. Reduce heat and allow to simmer 15-20 minutes.
  6. While soup is simmering, juice the limes and set aside.
  7. Start preparing the toppings: grate cheese, chop cilantro, cut up avocado/prepare guacamole and fry tortillas.
  8. Right before serving, add lime juice and chicken to the soup.
  9. Salt and pepper to taste.
