Cajun Meat Loaf


  • 2 tbsp butter
  • 1/2 large onion, chopped
  • 1/2 cup green bell pepper, chopped
  • 1 tsp salt (optional/negotiable)
  • 3/4 tsp cayenne pepper
  • 1/2 tsp dried thyme, crumbled
  • 1/2 tsp freshly ground pepper
  • 1/4 tsp ground cumin
  • 1 lb lean ground beef
  • 1 egg, beaten to blend
  • 1/2 cup fine dry breadcrumbs
  • 1/2 cup ketchup
  • 1 tsp Worcestershire sauce


  1. Preheat oven to 375 degrees.
  2. Melt butter in heavy medium skillet over medium low heat.
  3. Add next 7 ingredients and cook until vegetables are tender, stirring frequently, about 10 minutes.
  4. Combine meat, egg, breadcrumbs, 1/4 cup ketchup and Worcestershire sauce in medium bowl.
  5. Blend in sauteed vegetables.
  6. Form mixture into loaf 1 3/4 inches high and 5 inches wide in baking dish.
  7. Bake 20 minutes.
  8. Spread top with remaining 1/4 cup ketchup and bake for 40 more minutes.

    I have been making this recipe since it was published in bon appetit weekday cook cookbook in the 1980s .I’m always misplacing my cookbook thanks for the recipe.You would think I would remember in ingredients but whatever.I have given this recipe out over the years with always rave reviews.
