Grandma’s Shells


  • jumbo shells
  • 15 oz ricotta cheese
  • 1 egg, beaten
  • salt and pepper
  • 1/2 cup mozzarella cheese
  • 1 tsp basil
  • spaghetti sauce
  • red pepper flakes, to taste
  • mozzarella cheese, to taste
  • sugar
  • italian seasonings
  • ground beef (if you’d like)
  • 1/2 cup each, mozzarella and parmesan, to sprinkle on top


  1. Cook pasta as directed on package and brown the beef, seasoning as you like.
  2. Meanwhile, begin the sauce preparation in a skillet: sauce, red pepper flakes, italian seasonings, sugar and mozzarella cheese.
  3. Saute sauce until warmed through.
  4. Mix the ricotta cheese, egg, salt and pepper, mozzarella cheese and basil until combined.
  5. When the shells are done cooking, drain them and begin to fill with either cheese, beef or both. (Make sure for the picky eaters in your family you remember which is which!)
  6. Fill a 9X13 pan with a thin layer of sauce on the bottom. Then, begin placing the filled shells in rows until the pan is full.
  7. Cover the shells with a little more sauce and sprinkle with mozzarella and parmesan cheese.
  8. Bake at 350 degrees for 30 minutes, covered in aluminum foil.
  9. Bake uncovered for 15 more minutes. Serve hot!
