Singapore Noodles

Ingredients

  • 6 oz mei fun noodles
  • 1 chicken breast, grilled and sliced thinly
  • 2 cloves of garlic, minced
  • 2 slices of onion, chopped
  • handful of bean sprouts
  • handful of cole slaw mix veggies
  • handful of snow peas (I can’t decide if I actually like having this ingredient in here or not)
  • 2 eggs, whisked
  • 2 tbsp soy sauce
  • 1 1/2 tbsp hot madras curry powder
  • 1/2 tbsp brown sugar
  • salt to taste
  • vegetable oil for “wokking”

Directions

  1. Prepare noodles as directed on package.
  2. Meanwhile, toss the chicken with the soy sauce and let sit while wok heats up.
  3. Chop onion and mince garlic.
  4. Cook chicken in soy sauce and a little bit of vegetable oil for a few minutes and then remove.
  5. Add a little more vegetable oil and cook onions, garlic and other vegetables for several minutes and then remove.
  6. Add a little more vegetable oil and cook eggs, stirring briskly.
  7. Add noodles, curry powder, brown sugar and then veggies.
  8. Toss to coat.
  9. Season to taste with salt.
