Veggie Garlic Pasta

Ingredients

  • healthy handful angel hair pasta
  • 1/2 cup tomatoes, diced
  • 1/4 cup onions, diced
  • 1/2 cup spinach
  • several cloves garlic, pressed
  • olive oil for garlic
  • 1/4  cup feta cheese
  • pepper to taste

Directions

  1. Cook pasta as directed on package.
  2. Pour oil into saute pan and dice vegetables, and press garlic.
  3. Put garlic in pan and saute alone for a few minutes on medium low heat.
  4. Add remaining vegetables and saute for 5 minutes on medium low heat.
  5. Add cheese and saute for 1 minute, or right before ready to mix with pasta.
  6. After draining pasta, mix vegetable mixture and pasta in medium size bowl.
  7. Pepper to taste.
