Zesty Minestrone

Ingredients

  • 1/4 cup KRAFT Zesty Italian Dressing
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 1 carrot, peeled, chopped
  • 1 can (14 1/2 oz) diced tomatoes, undrained
  • 1 can (19 oz) red kidney beans, rinsed
  • 2 cans (14 oz each) vegetable broth
  • 2 cups water
  • 1 tsp Italian seasoning
  • 1 1/2 cups small shell macaroni, uncooked
  • 1/2 cup KRAFT Grated Parmesan Cheese

Directions

  1. Heat dressing in large nonstick skillet on medium high heat.
  2. Add onions, celery and carrots and cook 2 mintes or until crisp-tender, stirring occasionally.
  3. Spoon into slow cooker.
  4. Add tomatoes, beans, broth, water and seasoning and stir.
  5. Cover with lid.
  6. Cook on low 6 hours (or on high 3 hours).
  7. Stir in macaroni and cook 10 to 15 minutes or until macaroni is tender.
  8. Sprinkle with cheese just before serving.
